Ingredients
- 1 pound ripe tomatoes
- 2 Hatch chilis roasted*
- 2 cloves garlic chopped
- Extra virgin olive oil, as needed up to ½ cup
- 1/2 of 1 bunch cilantro washed and torn up by hand
- 1 cup black quinoa
- 1 cup pearl couscous (aka Israeli couscous), Bob’s Red Mill™ preferred
- 4 cups water
