Ingredients
- 1 bell pepper chopped
- 1 onion chopped
- 1 pt grape tomatoes chopped
- 1/8 - 1/4 tsp cayenne pepper
- 1 pinch salt and pepper
- 1/4 tsp cumin
- 3 Tbsp lime juice
- 1 clove chopped garlic
- 1 if desired-chopped green chili pepper or jalapeno pepper
- 4 Tbsp butter or oil for frying
- 1 can of black beans if desired
- 6-8 oz shredded mexican cheese or cheddar
- 4 eggs
- 2-4 taco salad shells baked
- · handful chopped cilantro if desired
