Ingredients
- For the Slaw:
- 3 cups finely shredded cabbage (about 1/2 a small head)
- 1/2 small red onion, thinly sliced
- 1 small carrot, grated on the large holes of a box grater
- 1 cup fresh parsley leaves, roughly chopped
- 1 tablespoon sugar (see note above)
- 1/4 cup tahini
- 2 tablespoons juice from 1 lemon
- Kosher salt and freshly ground black pepper
- For the Chickpea Patties:
- 1/2 cup bulgur wheat
- 1 medium clove garlic, roughly chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon ground cayenne pepper
- 1 (15 ounce) can of chickpeas, drained, rinsed, and dried on paper towels
- 1/2 cup flour
- 1/2 cup water
- 1 1/2 cups panko-style breadcrumbs (see note above)
- 1/2 cup vegetable or canola oil
- 4 hamburger buns (see note above)
- Sliced pickles and pepperoncini for serving
