- For the Fajitas:
- 3 Tablespoons olive oil
- 1/4 cup fresh cilantro leaves chopped plus more for serving
- juice from 2 limes divided
- 2 medium chicken breasts cut into 1" chunks
- 4 medium bell peppers thinly sliced into strips
- 1 medium red onion thinly sliced into strips
- 1 head butter lettuce leaves washed (green leaf or romaine works too)
- sliced avocado and lime wedges for serving
