Ingredients
- 2 Boneless Chicken Breasts
- 2 Cups Extra Wide Egg Noodles
- 2-3 Cups Broccoli Florets
- 5-6 Ounces Spinach & Kale Mixture ; Enough to fill a medium size pan
- 1 Can Black Beans ; Drained & Rinsed
- 1 Can Diced Tomatoes ; Preferably with Onions and Peppers. Slightly Drained.
- 2-3 Cloves Garlic ; Peeled and Chopped
- 1/4 Cup Sun-dried tomatoes ; Chopped
- 1/2 Cup Cheese ; I used cheddar and swiss
- 2-3 Tablespoons Olive Oil
- 3-4 Tablespoons Tequila ; I used anejo, for deglazing
- 1-2 Tablespoons Cajun Seasoning ; I used Slap Yo Mama brand
- 8 Ounces Chipotle Sauce ; I used a store bought Old El Paso Brand Packet
