Ingredients
- * 4 mini whole wheat pita
- * 1 medium english cucumber, spiraled or thinly sliced
- * 10 grape tomato, sliced
- chickpea spread:
- * 1 cup cooked chickpea (aka garbanzo bean)
- * 1/4 teaspoon cumin
- * 1/4 teaspoon coriander
- * 1/4 teaspoon granulated garlic
- * 1/8 teaspoon fine grain sea salt
- * pinch of black pepper
- * 1/8 teaspoon red pepper flake (optional)
- * 1/4 cup fresh parsley (with most of the stem removed)
- * 2 teaspoon olive oil (use more for desired consistency)
- yogurt sauce:
- * 1/2 cup non fat plain greek yogurt
- * 1/8 teaspoon fine grain sea salt
- * 1/8 teaspoon black pepper
- * 1/4 teaspoon dried dill weed
- * 1 tablespoon olive oil
- * 3-4 tablespoon lemon juice
