Ingredients
- 1 lb. lean (or extra lean) ground beef
- 1 large yellow onion, roughly chopped
- 1 cup chopped carrots
- 1 1/2 cups fresh peas
- 2 cloves of garlic, chopped
- 1/2 cup of parsley, chopped and divided
- 1 1/2 cups stock
- 1 tbsp. olive oil
- 2 tbsp. tomato paste
- 2 sprigs of fresh thyme
- 1 tbsp. dried oregano
- 1 tsp. ground coriander
- 1/2 tsp. cayenne pepper
- pinch of allspice
- 1 bay leaf
- 2 tbsp. organic corn starch
- 2 or 3 potatoes (depending on how thick you want the topping)
- 1 cup greek yogurt
- salt and pepper to taste
