- 2.2 pounds (1 kilogram) good quality beef or Charolais beef, cut into 2-inch pieces.
- 1 (750ml) bottle Burgundian wine, like Pinot Noir
- 2 large stalks celery, roughly chopped
- 2 fresh bay leaves
- Pinch fresh thyme
- 2 large carrots, roughly chopped
- 2 large onions, peeled and quartered
- 1 bulb garlic, unpeeled and cut horizontally
- 1 tablespoon whole black peppercorns
- 2 ounces (50 grams) butter
- 2 tablespoons olive oil
- 8 ounces (200 grams) smoked bacon, pancetta or lardons, chopped into small dices
- 4 shallots, peeled and roughly chopped
- 3 tablespoons Dijon mustard
- Salt and pepper
- Mashed potatoes, recipe follows
- 6 medium potatoes, peeled and cut into large chunks
- 1/2 cup (1/4 pint) double (heavy) cream
- 2 1/2 ounces (75 grams) butter
- A handful chives
- A handful parsley
- 3 tablespoons extra-virgin olive oil
- Salt and pepper
