- 4 Sea Bass fillets
- 2 pound fresh spinach, steams removed
- ¼ of an onion, peeled and diced
- 2 garlic cloves, peeled and chopped small
- 1 tablespoon capers, rinsed
- 1 tablespoon fresh tarragon leaves, roughly chopped
- 1 teaspoon fresh thyme
- 1 lime squeezed
- ½ cup white wine
- 1 tablespoon butter
- 1 tablespoon oil
- Salt and pepper
- ¼ cup heavy cream
