- 2 tablespoons butter
- 1 large shallot or 1/4 medium onion, chopped
- 4 cloves garlic chopped, about 1 tablespoon minced garlic
- 1/4 teaspoon red pepper flakes (optional)
- 1 large lemon (about 2 tablespoons lemon juice + 1 Tbsp zest)
- 1/2 cup dry white wine
- 1 medium tomato diced
- 2 tablespoons fresh basil or parsley, finely chopped
- 1/4 cup grated parmesan cheese
- black pepper to taste
