Ingredients
  • The sauce:
  • 6 tablespoons ketchup (see Note)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons lemon juice
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon grated garlic
  • -- Scant 1/4 teaspoon grated fresh ginger
  • The cutlets:
  • 1 pound pork loin
  • -- Peanut or vegetable oil
  • -- Kosher salt to taste
  • -- Freshly ground black pepper to taste
  • 1/2 cup all-purpose flour for dusting
  • 2 eggs beaten with 1 teaspoon water
  • 1 1/2 cups panko (Japanese breadcrumbs)
  • 1/2 lemon, cut into half-moons or wedges
