Wild Mushroom and Herb Crusted Pork Loin with a Wine Mushroom Sauce
Ingredients
- 1 5-6 lb pork loin roast, boneless
- 2/3 cup dried mushrooms
- 2 teaspoon dried garlic powder
- 1 tablespoon fresh thyme leaves
- 2 tablespoon fresh parsley
- 2 fresh sage leaves
- 2 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil - paste should be thick
- 1-2 teaspoon olive oil (for roast)
- 1 small onion, chopped
- 1/2 pound fresh mushrooms, chopped
- 1/3 cup port wine
- 1 cup chicken broth
