Celeriac Apple and Tarragon Soup
Ingredients
- 2 tablespoons cooking oil
- 1/2 yellow onion, diced
- 1/2 cup peeled, diced carrot
- 2 garlic cloves, peeled and minced
- 1 bay leaf
- 2 cups celeriac, cut into large dice
- 1 apple, peeled and sliced
- 1 large potato, peeled and chopped
- 3 cups water
- 1.5 teaspoons dried tarragon
- 2 teaspoons minced, fresh parsley
- 1 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 4 tablespoons half-and-half or light cream
