Italian Chicken Chili
Ingredients
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1/2 red bell pepper, diced
- 3 cloves garlic, minced
- 3/4 teaspoon kosher salt, or to taste
- 1 teaspoon freshly ground black pepper
- crushed red pepper, to taste
- 1 teaspoon fresh oregano, chopped
- 1 teaspoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh sage, chopped
- 1/2 cup dry white wine, preferably Italian
- 2.5 cups cooked, shredded chicken, white and dark meat
- 1 15 oz can cannellini beans, drained and rinsed
- 2-3 cups chicken stock, preferably homemade
- 1/3 cup fresh basil leaves, chopped
- freshly grated parmigiano cheese, for serving
