Chunky Butternut Squash and Potato Soup
Ingredients
- 1 butternut squash (halved and seeds removed)
- 4 small/medium yukon gold potatoes (bite size cubes)
- 6 strips smoked bacon (cut into small pieces)
- 6 cups Zesty Herbed Chicken Broth (or regular low sodium chicken broth)
- 3 cups water
- 1/2 cup cream
- 1 tablespoon fresh thyme leaves
- olive oil
- salt and pepper
