  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 cup celeriac (Zucchini or eggplant would also work)
  • 2 large carrots
  • 2 medium yellow beets (Red will do just fine)
  • 1 tbsp butter
  • 1 tbsp olive oil (Coconut oil would also work nicely here)
  • 1 tbsp fresh tarragon (If using dried, use 1/2 tbsp)
  • 1/2 tsp cumin
  • 1 tsp ground chile peppers
  • Salt & pepper
  • 5 cups vegetable stock
  • 1/4 cup red wine (Optional but highly recommended)
  • 12 small cremini mushrooms
