Ingredients
- 1 lb Italian sausages, cut into 1/3-inch round slices
- 5 lb Chicken thighs, breasts and drumsticks (bone in)
- 1/4 lb thick cut bacon
- 1 large Vidalia onion, chopped (4 cups)
- 3/4 cup celery (about three stalks), chopped
- 4 x carrots, peeled and chopped
- 4 cup canned cannellini beans, drained and rinsed
- 4 x cloves chopped garlic
- 1 can chopped/diced tomatoes with juice (28 oz.)
- 2 x Bay leaves
- 1 tsp dried thyme (or about four sprigs of fresh thyme)
- 1 cup red wine
- 1 cup low-sodium chicken stock
- 1 tsp Worcestershire sauce
- 4 tbsp olive oil, divided
- Salt and freshly ground pepper to taste
- 6 tbsp fresh bread crumbs
- 4 tbsp butter, melted
- 1/2 cup chopped parsley
