Ingredients
- 3 chorizo sausages
- 3 duck marylands (leg and thigh separated) that have been lightly prinkled with salt and dark sugar overnight
- 6 small pieces of smoked pork
- 200g Mount Zero lentils
- 2 heads of garlic separated with the loose skin removed, but not peeled.
- 3 bay leaves
- 6 juniper berries
- a sprig of thyme
- the zest of an orange
- 1.5 litres of beef or chicken stock
