Ingredients
- 1.5kg chuck steak, cut into 5cm pieces
- 1 large brown onion, peeled and chopped
- 2 carrots, peeled and chopped
- 2 large cloves garlic, peeled and lightly bruised with a knife
- 1 bouquet garni (made of 1 bay leaf, sprigs of parsley and thyme)
- 750ml (1 bottle) good-quality red wine
- 2 tablespoons brandy
- 185g salt pork, cut into pieces
- 1/3 cup plain flour
- 500g small button mushrooms, halved
- Buttered noodles, to serve
