- * large knob butter
- * 10 echalion (banana) shallot, peeled and sliced vertically
- * 6 slice good quality thick smoked bacon,
- * 12 chestnut mushroom, cleaned and cut in 1/2
- * 1 large glug of brandy or cognac
- * 1tbsp corn flour
- * sea salt and freshly milled black pepper to taste
