- 1/2 small red onion, thinly sliced
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
- 1/4 teaspoon pepper
- 1/4 cup fresh parsley leaves, divided
- 2 tablespoons chopped walnuts or sliced almonds, toasted
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons Sherry vinegar
- 1 teaspoon minced fresh thyme leaves
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic, very finely minced or grated on a Microplane grater
- Kosher salt and pepper to taste
