- 1 Turkey Carcass (with some meat and brown skin)
- 3 Ribs of Celery chunked
- 4 Carrots chunked
- 2 Medium onions rough chopped
- 3 Cloves garlic, minced
- 1 Large sprig of fresh sage
- 3 Sprigs of fresh thyme
- 1 Sprig of fresh rosemary
- 1 teaspoon Whole peppercorns
- Salt (Kosher works best)
- Cold water
- Fresh Ground Black Pepper
