Ingredients
- 1 pound filet mignon, trimmed
- 1 teaspoon garlic pepper
- 2 tablespoons olive oil
- 2 strips Applewood Smoked bacon, diced
- 1 garlic clove, minced
- 3/4 cups red wine
- 1 cup beef stock
- 2 teaspoons tomato paste
- 1 sprig fresh thyme
- 1 cup pearl onions (I use frozen)
- 4 carrots, cut diagonally into 1-inch-thick slices
- 2 tablespoons unsalted butter at room temperature
- 1 tablespoons all-purpose flour
- 1 cup baby portabella mushrooms, sliced 1/4-inch thick
- Salt & Pepper
- Cooked Egg Noodles or Mashed Potatoes
