- 2 cups good red wine , divided
- 2 onions, thinly sliced
- 4 medium yellow carrots, diced
- 4 whole stalks celery, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 3-4 sprigs fresh thyme
- 1 bay leaf
- 1 cup chicken or beef broth, plus more if necessary
- 1 pound white button mushrooms, sliced
