Ingredients
- 6 slices bacon, diced
- ½ cup white onion, diced
- 1 tbsp. vegetable oil
- 2 lbs. beef stew meat, cut into 1 inch chunks
- ¼ cup all purpose flour
- 2 cups red wine
- 1½ cups beef stock
- 1 tbsp. tomato paste
- Bouquet garni (parsley, thyme, and a couple bay leaves tied in cheese cloth or with kitchen twine)
- 2 cups frozen pearl onions
- 2 tbsp. butter
- 1 lb. small button mushrooms, halved
- ½ cup cognac or brandy
- ½ cup parsley, chopped
- Salt and pepper
