- 5 saffron strands, soaked in 1 tablespoon boiling water
- 2-3 tablespoon. rapeseed or olive oil
- 1 large onion, peeled and diced
- 1 red pepper, diced
- 2 garlic cloves, peeled and chopped
- 1½ teaspoon paprika
- Pinch of cayenne pepper
- Salt and freshly ground black pepper
- 2 large tomatoes, roughly chopped
- 300g paella rice
