- 8 ounces Brown Lentils
- 3 Cups Water
- 1½ Tablespoons Grapeseed Oil
- ½ Large White Onion, finely chopped
- 3 Garlic Cloves, minced
- 1 Jalapeno, finely chopped
- 1 15 ounce Can Tomato Sauce
- 1/4 Cup Water
- ½-3/4 Tsp Salt, or to taste
- ½ Tsp Black Pepper
- 2 Medium Yukon Gold Potatoes, peeled & dice into ¼-1/2 inch pieces
- 1 Large Carrot, diced into ¼ inch pieces
- For the Arepa Biscuits:
- 1 Cup PAN Harina
- 1 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1/4 Tsp Sea Salt
- 1 Cup + 2 Tablespoons Warm Water
- 2 Tablespoons Vegetable Oil
