- 2 to 3 carrots, peeled and sliced
- 2 to 3 stalks celery, sliced
- 1 to 2 large potatoes, peeled and diced
- 2 tablespoons chopped parsley leaves, plus 3 sprigs reseved for garnish
- 2 cups sauerkraut, drained
- Sea salt and freshly ground black pepper, to taste
