Ingredients
- 10-12 baby aubergines slit lengthwise with stems intact
- 4 tbsp vegetable oil
- 1 tsp asafoetida
- 3 cloves
- 2” cinnamon stick
- 5 green cardamom pods
- 120gms tomato finely chopped
- 1 heaped tbsp coriander powder
- 1 tsp mild chilli powder
- 1 tsp turmeric powder
- 1 tsp dried ginger powder
- 1 heaped tsp fennel coarsely ground
- 350mls water
- 1 tsp tamarind paste
- Salt to taste
- 1 tbsp chopped coriander for garnish
- 2 tbsp vegetable oil
- 450gms white onion thinly sliced
- 50mls water
