Ingredients
- 1 Tablespoon extra virgin olive oil
- 1/2 cup red onions (diced)
- 1/2 cup celery (chopped)
- 1/4 cup red bell pepper (diced)
- 1/4 cup green bell pepper (diced)
- 1 cup cabbage (thinly sliced)
- 1 clove garlic (minced)
- 1/4 teaspoon coarse black pepper
- 4-6 cups chicken broth (depending on thickness desired, I used 6)
- 2 cups cooked (skinless chicken breast, chopped (rotisserie is delicious))
- 1/2 teaspoon kosher salt
- 1 pkg (7.27oz FORTUNE UDON CHICKEN FLAVORED NOODLES)
- 1 10.8oz bag Asian Medley frozen vegetables
- 1 cup fresh baby spinach (chopped)
- 1 1/2 Tablespoons sweet chili sauce
