- 1 1/2 tablespoons finely chopped Thai basil
- 1/2 tablespoon finely chopped caper
- 2 teaspoons finely minced shallots
- 1 teaspoon Dijon mustard
- 1/2 tablespoon lime juice
- 1/4 teaspoon freshly ground black pepper
- Taipei oyster po'boy:
- 30 small-size, or 20 medium-sized shucked oysters
- 1 large handful of Thai basil leaves
- 2 small cloves of garlic, finely minced
- 1/2 teaspoon ground white pepper + 1/4 tsp of ground black pepper
- 1 loaf of ciabatta, or Italian hero
- A wedge of lime and Tabasco sauce to serve
- *** THE BREADING:
- 1/2 cup (60 grams) of tapioca flour
- 1/3 cup (58 grams) of fine cornmeal
- 1 1/2 tablespoons (17 grams) of coarse cornmeal
- 3/4 teaspoon salt
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup whole milk
