- 1-1 1/2 pounds large shrimp, deveined and shelled except for the tail
- 1 cup extra-virgin olive oil
- 3/4 cup fresh squeezed lime juice
- 1/4 cup unseasoned rice wine vinegar
- 1/4 cup apple cider vinegar
- 1 teaspoon salt
- 1 two-inch piece of ginger, finely minced
- 2 cloves of garlic, finely minced
- 1/4 cup cilantro, chopped relatively fine (or less to taste)
- 1 tablespoon aleppo pepper (or .5 tablespoon red-pepper flakes)
- 1 teaspoon pink peppercorns, lightly crushed
- 1 lime, thinly sliced
- 1/2 small red onion, thinly sliced
