- 1 large shallot, sliced
- 2 tbsp. olive oil
- Kosher salt and pepper
- 2 tsp. fresh thyme
- 1/2 c. fresh ricotta cheese
- 1 tsp. grated lemon zest
- 1/2 c. grated pecorino Romano cheese, divided
- 1/4 to 1/2 tsp. red pepper flakes
