- For pancakes:
- 1 cup milk (any type will work, even non-dairy)
- 2 large eggs
- 2 teaspoons vanilla extract (optional)
- 2 cups Pancake Mix (recipe below)
- 1 teaspoon coconut oil (at any temperature)
- 10 tablespoons blueberries, chocolate chips, or a mix or both, divided (optional)
- Salted butter, for serving (optional)
- Maple syrup, for serving (optional)
- For pancake mix:
- 6 1/2 cups all-purpose flour
- 3/4 cup plus 1 tablespoon granulated sugar
- 1/4 cup plus 1 teaspoon baking powder
- 2 tablespoons Diamond Crystal kosher salt, or 1 tablespoon Morton kosher salt
- 1 cup plus 1 tablespoon coconut oil (refined or unrefined), solid and at room temperature
