- 1/2 tablespoon smoked paprika (regular is fine)
- 2 bay leaves
- 2 tablespoons olive oil
- 1 small yellow onion, finely chopped into small squares
- 1 1/2 cups room temperature water
- 1 teaspoon sherry or red wine vinegar
- kosher salt
- fresh black pepper
- basil or parsley for serving
- pair with a side of rice or couscous (optional)
