Ingredients
- 1 cup onion, finely diced
- 8 ounces Cream of Chicken soup (I used campbell's)
- 1 cup sour cream
- 8 tablespoons melted butter
- 1 teaspoon salt (more if needed)
- 26 ounces shredded hash browns (thawed)
- 1/2 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese (1/2 in casserole, 1/2 on top)
- 4 pieces bacon, cooked and chopped (I used turkey bacon)
- 1/2 teaspoon black pepper
- 1/2 teaspoon parsley
