Ingredients
- 2 (3-pound) whole chickens, innards removed, legs and breasts separated
- 1 large onion, peeled and cut in half
- 1 large carrot, peeled and cut in half
- 2 celery ribs, washed and cut in thirds
- 1 Tablespoon kosher salt
- 1 stick of cinnamon
- 1 whole star anise
- 1 clove of garlic, crushed
- 2 bay leaves
- 4 Tablespoons fresh lemon juice
- 2 Tablespoons extra virgin olive oil
- 2 heads broccoli, cut into florets
- 4 1/2 Tablespoons hawyej or curry powder
- 1 bunch parsley
- 1 Cup matzo meal
- 1/2 Cup duck fat (chicken fat can substitute)
- 4 whole eggs, lightly beaten
- 3 Teaspoons salt
- 1/2 Teaspoon onion powder
- 1/2 Teaspoon garlic powder
