Ingredients
- 1 teaspoon Sesame Oil
- 1 tablespoon Olive Oil
- 3 Shallots, Thinly Sliced
- 1 tablespoon Fresh Ginger, minced
- 2 Cloves of Garlic, minced
- 2-4 Red Bird's Eye Chili's, chopped (Seeded or not, to your own level of desired heat)
- 1 Finely Chopped Lemongrass Stalk (white part, woody outer parts removed)
- 1 Red Bell Pepper, Julienned
- 1 handful Snow Peas
- 3 tablespoons Red Curry Paste
- 1 cup Low Fat Coconut Milk
- 1/2 cup Dry White Wine, or seafood stock
- 1 tablespoon Lime Juice, or juice of 1 lime
- 2 pounds Small Mussels, Scrubbed and Debearded
- Salt and Pepper to Taste
- 1 bunch Thai Basil Leaves, Chiffonade
- Lime Wedges, as Garnish
- Warm Naan bread
