- ½ cup any white long-grain rice
- 1 bay leaf
- 1 tsp. black peppercorns
- 1 tsp. ground turmeric
- 1 tsp. kosher salt, plus more
- ¼ cup ghee or unsalted butter
- 2 tsp. cumin seeds
- 2 dried red chiles
- Pinch of asafetida (optional, but really good)
- Pinch of red chili powder
