Ingredients
- 2 small or 1 large yellow onion, diced small
- 1 red bell pepper, diced small
- 4 cloves of garlic, minced
- 1 pound spicy Italian sausage (removed from casings if necessary)
- 1 28 oz can of San Marzano tomatoes (whole, without calcium chloride)
- 1 1/2 teaspoons dried oregano
- 1 pound radiatore pasta
- 1/4 teaspoon red pepper flakes (optional, depends how hot you like it and/or how spicy your sausage is)
- olive oil to coat the pan
- salt, to taste
- 1 cup reserved pasta water
