Ingredients
- 5 tbsp plain flour
- 1 bottle red wine , Burgundy is best
- 1 organic chicken , jointed into 8 (you can ask your butcher to do this)
- 250.0g smoked bacon, cut into lardons
- 12 baby carrots , peeled
- 4 tbsp olive oil
- 12 shallots , peeled
- 2 sprigs thyme
- 12 baby leeks , trimmed
- 100.0ml chicken stock
- 2 sprigs rosemary
- 100.0ml cognac
- 2 bay leaves
