- 1 handful fresh chives, finely chopped
- 1 handful fresh cilantro leaves, coarsely chopped
- 1 large jalapeño, seeded and finely chopped
- 2 limes, zested and juiced
- 1 pinch kosher salt, plus more to taste

- 2 small tortillas (flour or corn)
- 2 to 4 large eggs
- 1 avocado, pitted, peeled, and thinly sliced or cubed
- 1/4 cup crumbled cheese, such as feta or queso fresco
- Pickled onions, for serving
