Spring Green Pea Risotto with Lemon
Ingredients
- 6 cups reduced sodium chicken broth
- 2 cups water
- 1 large shallot, finely chopped
- 2 large garlic cloves, finely minced
- 1 cup Arborio rice, rinsed
- 1 cup green peas, fresh if available, frozen will work as well
- 1/3 cup Parmigiano-Reggiano, grated
- 4 tablespoons butter, unsalted (divided)
- 2 teaspoons lemon zest, grated (more if desired)
- 2 teaspoons fresh lemon juice
- salt and white pepper
