- 1 tablespoon olive oil (or roasted pumpkin seed oil), plus more for coating and drizzling
- 1/2 teaspoon finely chopped fresh rosemary, plus a few sprigs for garnish
- 1/2 teaspoon salt
- 1/2 cup sliced red onions (or shallots)
- 1 1/2 cups sliced assorted mushrooms (such as oyster, shiitake and cremini) or 3/4 cup marinated wild mushrooms (optional)
- 1 lb prepared whole-wheat pizza dough, divided, or 2 medium store-bought whole-wheat pizza crusts
- Flour for rolling dough
- 1/2 cup fresh ricotta
- 1 cup grated fontina, divided
- Cornmeal for dusting
- 1/4 cup roasted or toasted pumpkin seeds (optional)
