  • 3 pounds fresh spinach (we can also use 3 &1/2 pounds frozen spinach)
  • 2 leeks chopped
  • 1 medium onion chopped
  • 1 bunch scallions chopped
  • 1 bunch dill chopped
  • 1/2 pound crumbled feta cheese
  • 2 eggs
  • 1/2 cup olive oil
  • nutmeg, salt, black pepper
  • 6 - 9 thick phyllo dough sheets (should be about 2 inches bigger, around your baking pan).
  • plus olive oil for brushing
  • 2 pounds plus 2 cups all purpose flour
  • 2 - 2,5 cups warm water
  • 1/3 cup olive oil
  • 1 tablespoon vinegar
  • 1,5 teaspoons salt
