- 1 cup Diced Onion
- ½ cups Flour
- 3 cups Milk
- 2 teaspoons Hot Sauce, Frank's Recommended
- 4 cups Sharp Cheddar Or Colby Jack Cheese, Divided
- 4 cups Frozen Hash Browns, Thawed
- 10 whole Eggs, Beaten
- 1 teaspoon Kosher Salt
- ½ teaspoons Ground Black Pepper
