- 2 tbsp. vegan butter or extra-virgin olive oil, divided
- 1 medium shallot, halved and thinly sliced
- 2 garlic cloves, minced
- 0.25 c. dry white wine
- 1.5 c. low-sodium vegetable broth, divided
- 3 sprigs fresh thyme (optional)
- 0.5 lemon, washed, cut into thin rounds, and quartered
- 2 tbsp. capers, drained
