Ingredients
- Tofuchi:
- 1/2 a block of tofu (i use non gmo japanese medium tofu)
- 1 cup diced fresh tomato (any)
- 1 cup diced fresh basil
- 3 tablespoons olive oil
- 4 table spoons "zatar spice" or vegan pesto (http://en.wikipedia.org/wiki/za'atar - mid eastern store - that is what i use and prefer it over pesto)
- 1/4 cup veggie mozzarella shreds
- Natural salt to taste
- Pepper to taste
- For garlic pasta:
- 2 cups whole wheat pasta
- 1/2 head of chopped garlic
- 1/2 cup of chopped cilantro
- 1 teaspoon chopped oregano (or dried spice)
- 3 table spoons olive oil
- Salt to taste
