- 1 cup salmuera (3 teaspoons kosher salt dissolved into 1 cup water)
- 2 tablespoons fresh oregano
- 2 bunches fresh flat-leaf parsley
- 6 garlic cloves
- 1 cup extra virgin olive oil
- 1 tablespoon crushed red pepper
- 2 tablespoons Spanish sweet paprika
- 1/2 teaspoon ground cumin
- 1 teaspoon freshly ground black pepper
- 1/2 cup white vinegar
- 2 tablespoons red wine vinegar
- 2 roasted red bell peppers, diced
- 1 pound baking potatoes, like russets, peeled, rinsed, and patted dry
- 3 to 4 cups vegetable oil, for frying
- 1 cup chopped fresh parsley
- 2/3 cup minced fresh garlic
