- 750 grams Pumpkin – chopped
- 1 liter Vegetable stock
- 1 sprig Sprig parsley – whole
- Salt & pepper
- TO SERVE
- 1 teaspoon Crème fraîche / per person (or coconut yogurt if vegan)
- A few Pumpkin Seeds
